I hope everyone had a Happy Easter! We had a fun filled weekend here at our house. :) Last night, I wanted something quick and easy to make because the hubby called to say that he didn't have class, and he was on his way home. :o
So, I found this recipe for Sloppy Joes over at Food.com. I was surprised at how good these were. They tasted almost like the canned sloppy joes which I won't be buying anymore now! The hubby and son LOVED them, too!
Ingredients:
- 1 lb ground beef
- 2 stalks celery, chopped
- ( I added 1 carrot, grated )
- 1 small onion, chopped
- 1 (8 ounce) can tomato sauce
- 1/4 cup ketchup
- 1/4 cup barbecue sauce (your favorite)
- 1 tablespoon firmly packed brown sugar ( I didn't use brown sugar )
- 1 teaspoon dry mustard ( I used regular yellow mustard )
- salt and pepper
- 1 tablespoon Worcestershire sauce
- 1 tablespoon vinegar ( Optional )
Directions:

In a large skillet, brown ground beef, celery and onion.

Drain the fat.
- Stir in remaining ingredients, simmer covered for 15-20 minutes, stirring occasionally.

If Sloppy Joes appear to be loose, leave cover off and let moisture evaporate.

Cook until it's the consistency you like for serving.
